Controlled designation of origin
Ruby red colour wine changing to garnet-colour, complex and persistent, aged in barrique barrels. Its grapes are grown in certified organic cultivations.
WINE VARIETAL: Barbera 100%
VINEYARD: From the Balin vineyard, completely exposed to the South, cultivated with low environmental impact organic treatments and careful summer thinning.
AVERAGE ANNUAL YIELD: Does not exceed 6.000 Kgs of grapes per hectare.
AGEING AND REFINING: The accurately selected grapes during the harvest follow a traditional winemaking process with maceration for 8-10 days.
The fermentation steps are carefully monitored until the malolactic fermentation. The ageing is carried out in oak barrique barrels for about 12 months and, after the blending, it rests for an additional month in the concrete tanks. Its refining occurs in the bottle for a couple of months before being distributed.
FRAGRANCE: It evokes sweet and ripe scents of jam and dried prunes as well as timber, tobacco, nutmeg.
TASTE: Warm, elegant, balanced tannin taste.
FOOD PAIRING: Its structure makes it appropriate for salami starters, especially salami for cooking, roasted and stewed meats, aged cheese.
PRESERVATION: It gives its best until 7 – 8 years from the harvest.
SERVING TEMPERATURE: Around 18° C.
