Intense and balanced wine that thanks to its great exposure to the sun acquires a very intense ruby red colour with purple reflections.
WINE VARIETAL: Dolcetto 100%
VINEYARD: Exposed to South-East, cultivated with the low arch Guyot system and with low environmental impact organic treatments.
AVERAGE ANNUAL YIELD: 7000 Kgs of grapes per hectare.
AGEING AND REFINING: Traditional winemaking process with destemming of grapes and repeated pumping over. The maceration lasts from 6 up to 8 days depending on the vintage.
At the end of the fermentation, it matures in vitrified concrete tanks until the bottling. Due to its great structure, we prefer to let it mature in the tanks for an extended time. The bottling is generally carried out at the end of August. It refines in the bottle for about one month before being distributed.
FRAGRANCE: Elegant and complex scent of red fruits, jam and licorice.
TASTE: It offers a persistent as well as harmonic sensation, warm, soft, light tannin taste.
FOOD PAIRING: Elegant pairing with first courses of pasta, roasted and stewed red meats, average aged cheese.
PRESERVATION: It maintains its delicious qualities for 7 or 8 years.
SERVING TEMPERATURE Within 15 and 18° C, according to the vintage.
RECOMMENDED WINE GLASS: Glass with average rim.
