PARLAPÀ – DOGLIANI SUPERIORE DOCG

Amazing wine for the complexity of its structure, it shows an intense and deep ruby red colour with vivid purple reflections.

This wine is grown in the best South, South-East exposures. We carefully follow the season’s course and carry out accordingly a very accurate thinning in August and an accurate selection during the harvesting process.

Average annual yield: Does never exceed 7000 Kgs per hectare.

Vinification: Classical winemaking with destemming and superficial maceration of grapes for 8 – 10 days under very careful survey. The ageing is carried out in 30 hectoliter wooden barrels for about 8 months until the bottling after repeated tastings.
The refining is carried out in the bottle for a couple of months before the distribution.

Characteristics: Wine spreading an intense, ethereal and persistent fragrance of ripe fruit and blueberry jam. Taste: The elegant glimmer of wood is accomplished by a full, warm and sapid light tannin taste with a pleasant, slightly bitter aftertaste.

Pairings: Sufficiently structured and harmonic to be paired with elaborated and important courses based on filled pasta, stewed or braised meats, aged cheese.

Serving temperature: 16 – 18°C

Alcohol content: 14% by volume (depending on vintage)

Acidity: 5.6 g/l (depending on vintage)

Residual Sugar: 2 g/l (depending on vintage)
